Saturday Cooking Time

Eating out Sunday night this week so my cooking day has been pushed forward.

And as I am going away this week, I’m trying to use up the kind of vegetables you might always have in stock such as onions and potatoes.

Enter potato pancakes.  The recipe I used called them “potato latkes” which the Japanese author wrote she learned from a Jewish family in New York.

The black spots are not supposed to be there.  My pan which I hadn’t used for a while apparently needed some cleaning before being used…
